I have several databases in my configured replica set I manage to back up my entire replica set but I would like to differentiate the backup of my two existing databases, is it possible with percona backup to back up only one of the two databases of my replica set? same question for restore ?

This is exactly what you want. Backup a single database and restore a single DB from that backup or from a full backup.

Its status is done, does it mean it has been released? Can we use it?

Selective backup and restore has been added from PBM v2.0.0 for replicaSet. In the current v2.1.0, sharded cluster is also supported.
Important:
Selective backup and restore is the technical preview feature.
GA version will be mostly available in the upcoming releases. In mean time you can test in your lower environment for the functionality.
