I tried to install on brew but could not find more than 8.0.29, is there another source to setup on osx?

Unfortunately, there is no other choice but to wait until a newer version of xtrabackup is added to percona-xtrabackup — Homebrew Formulae.
As an alternative way to install the latest version of xtrabackup, you may use docker on mac os Run Percona XtraBackup in a Docker container - Percona XtraBackup.
