Also, this is not an “upgrade” but rather migration to another replication technology. By upgrade, we mean to use a newer software version.

The general idea is similar as described in this bit old webinar: Migrating To Percona XtraDB Cluster
The best option IMHO is to configure one of the current replicas as a PXC node, bootstrap it, while letting it continue async replication. Later, other replica nodes can be migrated too, but async replication should be enabled on just the first migrated one.
