Yes you can, PMM3 will work without Whatch tower.
Whatch tower is needed for future container upgrades.
Hi! Just to confirm - all that percona/watchtower does is pull a newer version of PPM and restart it, is that correct? Or does it handle breaking changes migration tasks as well?
I’m just reluctant to be mounting /var/run/docker.sock, and that’s not considered good practice and is open for security vulnerabilities.
If I just do the usual routine of pull + up -d, that should be ok, right?

@nunop Watchtower is only needed if you want to do upgrades via the PMM UI. If you are more comfortable using the typical ‘pull’, and recreate container, that works too.
