Maybe I’m overlooking something, but it appears XtraBackup and Server are available for 8.0, but Cluster is still at 5.7. Is Cluster 8.0 available and I’m missing it or is it not available yet? If not available, is there an estimate on when it might be available?

Thanks for the question, and no, you aren’t missing anything.
Percona XtraDB Cluster is in development and we hope to have the production release available in the next few weeks. Unfortunately, I can’t be more specific because as a policy we don’t give out production dates.
However, in the meanwhile, I thought you might like to see this slideset from a presentation to Percona Live last September that addressed PXC 8.0.
